Keto Stone Fruit Cobbler

Craving something sweet without refined sugar? This seasonal cobbler accomplishes several things. While satisfying your sweet tooth, it keeps you on the keto highway with no added sugars and refined carbs intact. This cobbler also supports our local farmers by using local and seasonal ingredients, and at the same time, fortifies our gut microbiome with the necessary bacteria that is only found in fruits and produce in season. And it's just damn delicious.

Ingredients:

  • 1 pound fresh, in-season stone fruit (such as peaches or plums)

  • 1 tablespoon cinnamon

  • 1-2 tablespoons 0 Acre Farms oil (or any other keto-friendly oil)

  • Almond flour (for the topping)

  • 2 egg whites

  • Keto-friendly sweetener of your choice (to taste)

  • Sprouted granola or Lauren Living Healthade granola (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Wash the stone fruit, remove the pits, and slice them into thin wedges.

  3. In a mixing bowl, combine the sliced stone fruit with the cinnamon and mix well.

  4. Grease a baking dish with the 0 Acre Farms oil to prevent sticking.

  5. Spread the seasoned stone fruit evenly in the greased baking dish.

  6. In a separate bowl, whisk the egg whites until they form stiff peaks.

  7. Gently fold in the almond flour and keto-friendly sweetener to the egg whites.

  8. Carefully spread the almond flour mixture over the stone fruit, covering it completely.

  9. If desired, sprinkle the sprouted granola or Lauren Living Healthade granola on top for added crunch.

  10. Bake in the preheated oven for about 30-35 minutes or until the topping is golden brown and the fruit is tender.

  11. Allow the cobbler to cool slightly before serving. Enjoy it warm as is or with a dollop of keto-friendly whipped cream or low-carb ice cream, if desired.

Note: Adjust the amount of sweetener according to your taste preference and the sweetness of the stone fruit.
